Our production of high quality extra virgin olive oil is made of characteristic Umbrian "cultivars" such as Moraiolo, Leccino and Frantoio.

The Capitolini estate has set its roots in an environmentally friendly agriculture; nature has always been our source of inspiration and it is our commitment to listen to it, safeguard it and protect it. The great love for the olive tree, a centuries-old plant, sacred and a source of wealth, has led us to undertake the production of oil, excluding the use of synthetic chemicals (fertilizers, herbicides, insecticides, pesticides in general) and GMOs through suitable cultivation and processing methods.

BENEFICIAL PROPERTIES:

Recent studies prove that disorders and diseases, especially of nervous origin, are caused by substances from pesticides in conventional foods. Keeping the nutritional properties and active ingredients intact strengthens the immune system and reduces the risk of allergies.
Cold-pressed extra virgin olive oil has become the king of the Mediterranean diet thanks to its beneficial and anti-aging properties; in fact, it protects against free radicals by preventing cellular aging, helps decrease the likelihood of vascular disease and the risk of arterial occlusion. Such a valuable asset for our health cannot be ruined by the use of pesticides.

OUR OLIVE GROVES:

Our olive groves are located in Collelungo, in the hills of the municipality of San Venanzo, 400 m above sea level, in a landscape of rare beauty.

Our oil stands out for its particular characteristics of typicality and high nutritional value also from the favorable environmental factors, both of location and climate: in fact, our olive groves are located on permeable hilly soils, which favor a deep penetration of the roots and the temperate climate characteristic of the Umbria region, makes the olives ripen relatively slowly, with remarkable results in terms of acidity, taste and flavor typically fruity.

PROCESSING METHOD:

The harvesting method we use is called "brucatura". The manual harvesting of the fruit on the tree allows us to choose only olives in excellent condition without damaging them and without causing any damage to the plant. We harvest the olive when it reaches the beginning of ripeness, at the beginning of November, when it has the maximum fruity aroma, the minimum acidity and the optimal polyphenol content.

The freshly harvested olives are taken to the olive press, thus being able to be processed in their maximum freshness and integrity; the extraction process is carried out cold in order to best preserve the organoleptic and nutritional characteristics.

You can enjoy Tenuta Capitolini's oil by using it in any recipe. Uncooked on a slice of bread, the typical "bruschetta," on a vegetable soup , on pasta and beans or other legumes, on grilled meats and fish, on boiled meats, etc...It is also suitable for cooking and frying foods because it "holds up better" and resists high temperatures and on the fire undergoes less alteration than all other vegetable oils.

It is extremely digestible, more so than any other condiment; cholesterol-free, consumption of extra virgin olive oil supports "good" cholesterol (HDL) which counteracts "bad" cholesterol (LDL).

It is the ideal condiment for a pleasant diet in harmony with the basic principles of balanced, modern nutrition.
